Norma stanoví postup při odběru vzorků a fyzikálně chemickém zkoušení cukrářských zmrzlin. Poměrně rozsáhlá norma má tyto kapitola: I - Všeobecně, II - Braní vzorků, III - Smyslové zkoušky, IV - Fyzikálně chemické zkoušky a Dodatek. Norma se vztahuje k zjišťování některých kvalitativních znaků (jakosti) významných pro hygienu výživy. ČSN 56 0140 byla schválena 16.7.1970 a nabyla účinnosti od 1.3.1971. Nahradila ČSN 56 0140 z 4.3.1964
