Tato norma definuje stanovení biacetylu a ostatních vicinálních diketonů. Tvorba vicinálních diketonů při kvašení mladiny souvisí se syntézou valinu a isoleucinu. Důležitými meziprodukty této syntézy jsou 2-acetolaktát a 2-acetohydroxybutyrát, ze kterých oxidativní dekarboxylací vznikají biacetyl a 2,3-pentandion. Obě tyto sloučeniny mají velký význam ze senzorického hlediska, protože při překročení prahové koncentrace vnímání vyvolávají nežádoucí změny aromatu piva
