Norma obsahuje ISO 5564:1982. Metoda popsaná v této normě je založena na mnoha mezinárodních zkouškách, prováděných ve spolupráci po dlouhou dobu. Metoda vyhledává optimalizaci mnoha proměnných za účelem definování postupů a poskytnutí jednotného měření ostrosti pepře. Norma specifikuje spektrofotometrickou metodu pro stanovení obsahu piperinu v černém nebo bílém pepři (Piper nigrum L.), celém nebo mletém.
