Diese ÖNORM legt ein spektralphotometrisches Verfahren zur Bestimmung des Nitrat- und Nitritgehaltes von Fleischerzeugnissen fest und ist für verschiedene Fleischerzeugnisse mit Gehalten von 9 mg/kg bis 21 mg/kg an Nitrit, berechnet als Natriumnitrit und 23 mg/kg bis 48 mg/kg an Nitrat, berechnet als Natriumnitrat im Ringversuch geprüft worden.
