Diese Europäische Norm legt ein Verfahren zur Bestimmung von Blei, Cadmium, Zink, Kupfer und Eisen in Lebensmitteln mit der Atomabsorptionsspektrometrie (AAS) nach Mikrowellenaufschluss fest. Das Verfahren ist für die Bestimmung in vielen verschiedenen Lebensmitteln anwendbar. Das Verfahren ist nicht anwendbar auf Öle, Fette und sonstige sehr fetthaltige Produkte. Das Verfahren ist in einem Ringversuch, an dem 16 Laboratorien teilgenommen haben, erfolgreich geprüft worden. Zu den Lebensmitteln, auf die dieses Verfahren anwendbar ist, gehören Mischdiäten, Getreide, Fisch, Rindfleisch, Milch und Pilze. Lebensmittel, für die es spezielle Europäische Normen gibt, sind vom Anwendungsbereich dieser horizontalen Europäischen Norm ausgenommen. Es obliegt dem Analytiker, das Vorhandensein vertikaler Normen zu prüfen.
