Diese Europäische Norm legt ein Verfahren zur Bestimmung von Vitamin B1 in Lebensmitteln mit Hochleistungsflüssigchromatographie (HPLC) mit Enzymbehandlung und Vor- oder Nachsäulenderivatisierung fest. Diese Bestimmung wurde in zwei Ringversuchen validiert. In dem einen Ringversuch wurde Vollkornmehl, Milchpulver/sprühgetrocknete Milch, gefriergetrocknetes Mischgemüse und gefriergetrocknete Schweineleber mit Gehalten von 0,295 mg/100 g bis 0,807 mg/100 g analysiert. Im zweiten Ringversuch wurde Krankenhausnahrung, Babynahrung mit Gemüse, Milchpulver, Fertignahrungsmittel mit Früchten, Hefe, Getreide, Schokoladenpulver und Nahrungsergänzungsmittel von 0,11 mg/100 g bis 486 mg/100 g untersucht. Vitamin B1 ist der Massenanteil an Gesamtthiamin einschließlich der phosphorylierten Derivate.
