Dieses Dokument beschreibt ein Verfahren zur Bestimmung von Ochratoxin A (OTA) in Schweinefleischerzeugnissen, insbesondere Schinken, Schweinefleisch-basierten Erzeugnissen (geschnittenes Schweinefleisch in Dosen) und Schweineleber mit Hochleistungsflüssigchromatographie mit Fluoreszenzdetektion (HPLC-FLD). Das Verfahren wurde für Ochratoxin A in natürlich kontaminiertem Schinken, Schweinefleisch-basierten Erzeugnissen (geschnittenem Schweinefleisch in Dosen) und Schweineleber im Bereich von 0,5 µg/kg bis 11 µg/kg validiert. Laborerfahrungen haben gezeigt, dass dieses Verfahren auch auf Pastete und Nieren anwendbar ist.
