Diese Internationale Norm legt ein Verfahren zur Bestimmung der Alkalität von tierischen und pflanzlichen Fetten und Ölen ohne Unterscheidung zwischen den verschiedenen Bestandteilen fest. Das Verfahren ist nicht anwendbar auf Fette und Öle mit einer Acidität über 60 % (Massenanteil), bestimmt nach ISO 660:1996. Mit dem Verfahren kann nicht festgestellt werden, ob trockene geschmolzene tierische Fette mit alkalischen Lösungen behandelt worden sind oder nicht.
