Diese ÖNORM beschreibt ein Routineverfahren zur Bestimmung des Gesamt-Stickstoff-Gehaltes in Milch und Milchprodukten. Eine Analysenprobe wird durch Erhitzen in einer Bombe gemäß Dumas aufgeschlossen. Störende Substanzen werden aus der resultierenden Gasmischung entfernt. Die Stickstoffverbindungen, die in der Probe enthalten sind, werden in molekularem Stickstoff überführt und mittels Wärmeleitfähigkeits-Detektor quantitativ bestimmt. Die Berechnung des Stickstoffgehaltes erfolgt mittels Mikroprozessor.
