Diese Internationale Norm legt Probenahmeverfahren für den Nachweis und die Zählung von Mikroorganismen auf der Oberfläche von Schlachttierkörpern oder Teilen von Schlachttierkörpern geschlachteter Schlachttiere fest. Die mikrobiologische Probenahme kann durchgeführt werden als Teil - der prozessbezogenen Hygienekontrolle (zur Validierung und/oder Verifizierung der Prozesskontrolle, z. B. Bestimmung der Gesamtkeimzahl und von Enterobacteriaceae) in Schlachtanlagen für große Säugetiere, Geflügel und Wild, - der risikobasierten Sicherungssysteme für die Produktsicherheit, und - der Kontroll- oder Überwachungsprogramme zur Verbreitung und/oder Anzahl von krankheitserregenden Mikroorganismen. Diese Internationale Norm schließt, abhängig vom Grund der Probenahme, die Anwendung von Ausschneide- und Abstrichverfahren mit ein. Sie schließt auch die Anwendung des Abspülens von Schlachttierkörpern zur Untersuchung von Geflügel-Schlachttierkörpern und Schlachttierkörpern einiger Kleintiere ein. In Anhang A sind die Probenahmestellen auf den Schlachttierkörpern verschiedener Tierarten dargestellt.
