Diese Internationale Norm legt ein Verfahren zur Bestimmung des Grads der Isomerisierung von Diacylglycerolen in pflanzlichen Fetten und Ölen fest. 1,2-Diacylglycerole werden während der Lagerung oder durch säurekatalysierte Reaktion in stabilere 1,3-Isomere umgewandelt. Der Massenanteil von 1,2-Diacylglycerolen kann als Qualitätskriterium für pflanzliche Fette und Öle dienen.
