Dieses Dokument legt ein Verfahren für die selektive Zählung von Bifidobakterien in Milchprodukten fest, indem ein Koloniezählverfahren bei 37 °C unter anaeroben Bedingungen angewendet wird. Das Verfahren ist anwendbar auf Milchprodukte wie fermentierte (z. B. Joghurt) und nicht fermentierte Milch (z. B. pasteurisierte Milch, Magermilch, Molkenproteinkonzentrate), Milchpulver sowie Rezepturen (z. B. Säuglingsnahrung, Folgenahrung für ältere Kleinkinder, Erzeugnisse für junge Kinder), in denen diese lebenden Mikroorganismen in Kombination mit anderen Milchsäurebakterien oder allein vorhanden sind. Das Verfahren ist auch anwendbar auf Starterkulturen und probiotische Kulturen. Für vorgeschlagene Qualitätskriterien von Milchprodukten siehe z. B. CXS 243-2003 [6]. In Milchprodukten verwendete Bifidobakterien gehören in der Regel zu folgenden Spezies (z. B. Literaturhinweise [7] und [10]): ż Bifidobacterium adolescentis; ż B. animalis subsp. animalis; ż B. animalis subsp. lactis; ż B. bifidum; ż B. breve; ż B. longum subsp. infantis; ż B. longum subsp. longum.
