Dieses Dokument beschreibt die Bestimmung der alpha-Amylaseaktivität von Getreide mit dem Fallzahl-(FN)-Verfahren nach Hagberg-Perten. Dieses Verfahren ist auf Getreidesorten anwendbar, insbesondere auf Weizen und Roggen und deren Mehl, Hartweizen und Hartweizengrieß. Für die Anwendung des vorliegenden Dokuments schließt der Begriff żMehlż Grieß und gemahlenes Getreidekorn (Vollkornmehl) ein, deren Korngrößen festgelegt sind. Das Verfahren ist nicht für die Bestimmung von geringen alpha-Amylaseaktivitäten anwendbar.
