Diese Internationale Norm legt ein Verfahren zur Bestimmung der Zusammensetzung von Fettsäuren fest, die in 2-Stellung (ß- oder Innenstellung) der Triglyceridmoleküle in tierischen und pflanzlichen Fetten und Ölen verestert sind. Wegen der Wirksamkeit der Pankreaslipase ist das Verfahren nur auf Fette und Oie mit einem Schmelzpunkt unter 45 C anwendbar. Das Verfahren ist nicht uneingeschränkt auf alle Fette und Oie anwendbar, besonders nicht auf die Fette und Öle mit hohen Anteilen an Fettsäuren mit 12 oder weniger Kohlenstoffatomen (Kokosöl, Palmkernöl, Butterfette), Fettsäuren mit 20 und mehr Kohlenstoffatomen und einem hohen Ungesättigtheitsgrad (mehr als vier Doppelbindungen) (Fisch- und Meerestieröle), Fettsäuren mit sekundären Sauerstoff haltigen Gruppen. ANMERKUNG: Fettsäuren mit Doppelbindungen in ( ~ 1 6b)i s (rl-1 1) Stellung (z.B. Petroselinsäure) werden durch Pankreaslipase nur sehr langsam umgewandelt. Dies kann zu falschen Ergebnissen führen.
