Touto třináctou částí normy se zavádí ST SEV 3010-81 Výrobky z ovoce a zeleniny. Metody stanovení celkové kyselosti, jako ČSN, jíž se pro potřeby ČSSR (ČSFR) popř. ČR norma RVHP nedoplňovala. Podstata dvou normalizovaných metod a postup při provádění normalizovaných zkoušek je (podrobně) popsán. Norma tedy stanovuje postupy pro provádění některých zkoušek (metod) zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0246-13 byla schválena 11.2.1983 a nabyla účinnosti od 1.7.1983. Nahradila čl. 44 ČSN 56 0246 z 30.9.1964
