Tato třetí část normy stanoví způsob senzorického zkoušení konzervárenských polotovarů a výrobků z ovoce a zeleniny, konzervovaných teplem, chemicky, úpravou prostředí apod. Podstata normalizovaných metod a postup při provádění normalizovaných zkoušek je (podrobně) popsán. Norma tedy stanovuje postupy pro provádění některých zkoušek (metod) zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0246-3 byla schválena 11.4.1988 a nabyla účinnosti od 1.6.1989. Nahradila čl.19 až 29 ČSN 56 0246 z 30.9.1964
