Tato první část normy platí pro senzorické, fyzikální, fyzikálně chemické a chemické zkoušení konzervárenských polotovarů a výrobků z ovoce a zeleniny, konzervovaných teplem, chemicky, úpravou prostředí apod. Norma stanoví všeobecná ustanovení pro všechny ostatní části ČSN 56 0246. Další části normy určují metody na stanovení hodnot uvedených v příslušných předmětových normách. Norma tedy obsahuje obecné postupy pro normalizované metody zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0246-1 byla schválena 11.4.1988 a nabyla účinnosti od 1.6.1989. Nahradila čl. 1 až 6 ČSN 56 0246 z 30.9.1964
