Touto pátou částí normy se zavádí ST SEV 4253-83 Ovocná pulpa konzervovaná. Metoda stanovení hmotnostního podílu ovoce, jako ČSN, jíž se pro potřeby ČSSR (ČSFR) popř. ČR k normě RVHP doplnil jeden článek, který se nevztahuje k ochraně zdraví. Podstata normalizované metody a pracovní postup je (podrobně) popsán. Norma tedy stanovuje postupy pro provádění některých zkoušek (metod) zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0246-5 byla schválena 8.5.1985 a nabyla účinnosti od 1.7.1986. Nahradila čl. 33 ČSN 56 0246 z 30.9.1964
